GF Fried Summer Vegetables

It’s blazing hot and steamingly humid in Japan.  I’ve lost my appetite and lost some weight.  I wanted to eat something refreshing and not so heavy, so I’ve made this dish.  It’s really easy to cook(Pretty much all you need to do is cutting up the vegetables and fry them).  After eating this. I felt a lot better.

☆Ingredients(About 4 people, as for the quantity, please see the picture above):

  1. Eggplants
  2. Small Tomatos
  3. Japanese ginger
  4. Lemon
  5. Green Peppers
  6. Squash
  7. Paprika
  8. Zucchini
  9. Asparagus

☆Seasonings for the Ponzu(Soy Sauce with Citrus Juice):

  1. 2 tbsp of Soy Sauce
  2. 1 tbsp of Vinegar
  3. 1 tbsp of Mirin
  4. 1.5 tsp of Lemon Juice

☆Instructions:

1. Cut up vegetables as shown in the below pic.

2. Fry the vegetables(Be careful when you fry the Small Tomatos, you might as well put a cover over the frying pot.  Also, fry them just briefly and lift them up once they pop)

3. Make Ponzu(Mix the sauce ingredients in the above list).

4. Put the vegetables on a plate and pour the Ponzu on top.
